Leading the Culinary Team at Fatboy’s is Chef/Co-Owner Ronald Dutes. Chef Ronald Dutes deep appreciation for the culinary arts was developed at a young age growing up in New York City, where he was exposed to a variety of foods that would fuel his life long passion for cooking. He began his culinary career at the age of 15, at a Carvel Ice Cream Bakery. As a cake maker for Carvel, Ron’s creativity was sparked when he became proficient enough to be tasked with the responsibility of creating all special order cake request. 

At age 16, Ron was offered the opportunity to take a 2 year program that taught the very basics of culinary arts at his high school and he jumped at the opportunity. It was then that the spark was lit. Following high school, Chef Ron attended Johnson and Wales University Providence Campus and landed his first gig as a cook at Legal Seafoods in Warwick, RI and for the next two years studied and worked diligently at his craft.

In 2005 Chef Ron returned to NYC in a quest to learn as much about all aspects of the hospitality industry as he could. For the next few years he bolstered his experience and knowledge as a “Designated Training Server” for The Cheesecake Factory,a General Manager for Smoke BBQ Pit, and eventually a sous chef Position for BR Guest Restaurants, a company known for setting a very high standard, at the very popular and high-end Blue Water Grill in Union Square. From there he worked his way up and was promoted to Executive Chef of Bill’s Bar and Burger a new and growing concept for the company. 

Bill’s Bar and Burger allowed Chef Ron to sharpen and hone his managerial skills, but his creativity wasn’t satisfied and he yearned to be in a fine dining atmosphere again. This led Chef Ron to David Burke Prime at Foxwoods Resort and Casino where he learned from Chef Pedro Avila, the finer points of managing people, food, and labor cost and creating flavorful, and memorable meals. Chef Ron then opened These Guys Brewing as Executive Chef in Norwich CT, where he was able to push his creative  limits to the max .  Now at Fatboy’s, Chef Ron hopes to bring flavorful and creative, out of the box dishes, to the New London Waterfront.

Running the Front of House is Danielle Sullivan.  Going by "Dani", this mother of two has been in the industry for over 9 years.  She has worked at a wide variety of establishments ranging from seedy dive bars to high end five star restaurants .  This variety of past experiences has given Dani a unique background and skill set.  She is using her experience to lead the service staff to deliver an excellent experience to every customer that comes into Fatboy's.
